It seems natural for an Iowa-based brewery to offer a corn-based beer. Iowa corn may make great whiskey, but we wanted something different. We found that open-pollinated, organic, heritage blue corn grown in New Mexico works like a charm. We start by exposing the starches in the corn with a cereal mash. The resulting purple porridge is then mashed with traditional barley malt causing the blueish-purple color to magically disappear. We add just enough Saaz hops to balance the sweetness without overwhelming the blue corn flavor. We hope this refreshingly crisp beer proves that adjunct lagers have a place in the craft beer world.
